Local Gastronomy

Effie Gialousi chef/food writer and co-owner of the Loriet Hotel was born on the island of Lesvos. She read philosophy and social studies at Monash University in Melbourne before becoming professionally involved in gastronomy, wine and spirits in 1985. By the year 2000 she was writing guidebooks, as well as articles in newspapers and magazines. The cuisine of Lesvos reflects her history and culture: it is rich, varied and distinctive, and inspires all who undertake to discover it. The recipes included in this book are purely a matter of personal choice. The dishes are simple and straightforward, made using natural ingredients, and are still being served to this day in the homes and restaurants of Mitilini.
